Blueberry Quinoa Power Bowl

Ingredients
- 1 cup quinoa cooked with 2 cups vegetable broth
- 2 cups low-sodium vegetable broth
- 1 cup frozen blueberries thawed
- 1 avocado pitted and diced
- 1 bag baby spinach
- ½ cup walnuts toasted and chopped
For the dressing:
- ¼ cup olive oil OPTIONAL
- 2 Tbs. lemon juice
- 3/4 tsp. salt
- ¼ tsp. black pepper

Instructions
- In a large bowl, combine cooked quinoa, blueberries, avocado, spinach and walnuts.
For lemon vinaigrette dressing:
- Whisk olive oil (OPTIONAL), lemon juice, kosher salt and pepper until blended. Stir in lemon zest.
- Toss with quinoa salad until evenly coated.
