Ingredients

For the salad:

  • 1 15 oz can kidney beans rinsed and drained
  • 1 15 oz can lentils rinsed and drained
  • 1 bag green beans fresh, steamable
  • 1 container organic spring mix
  • 4 Tbs capers

For the dressing:

  • 1 Tbs brine from capers
  • 2 Tbs peanut butter
  • 1 Tbs tahini
  • 1 Tbs soy sauce
  • 1 Tbs balsamic vinegar
  • 2 Tbs hot sauce

Instructions

  • Steam the green beans.
  • Whisk together all the dressing ingredients in a bowl until smooth.
  • Mix all the salad ingredients. Top with dressing.
