  • 1 avocado medium ripe, peeled and mashed
  • 8 slices whole grain vegan bread toasted
  • 2 tomatoes sliced
  • 2 shallots finely chopped
  • 1/2 cup hummus

Instructions

  • Spread avocado over two slices of toast. Top with tomato and shallot. Spread hummus over remaining toast; place on top of avocado toast.
