Cilantro-Peanut Stir-Fry

Ingredients
- 1/2 in fresh ginger grated
- 2 cloves garlic minced
- 1 cup pineapple juice
- 1/4 cup reduced sodium soy sauce
- 1 pkg extra-firm tofu
- 4 cups stir-fry mixed vegetables
- 2 cups brown rice cooked
- 1/2 cup roasted salted peanuts for topping
- 1/2 cup cilantro chopped
Instructions
- Press tofu for 10 minutes. Cube.
- Combine the first 4 ingredients in a bowl. Add cubed tofu and let marinate for about 10 minutes. Drain tofu, reserving the marinade.
- Saute tofu in a non-stick skillet for about 10 minutes until golden. Set aside.
- Warm brown rice. Assemble bowls by layering brown rice, stir fry veggies, and tofu. Top with cilantro and peanuts.
