Bay Avocado Sandwich

Ingredients

For the salad:

  • 1 avocado diced
  • 1 can chickpeas rinsed, drained, and mashed
  • 1 red bell pepper finely chopped
  • 2 celery ribs, finely chopped
  • 4 green onions finely chopped
  • 1/2 cup cilantro chopped

For Dressing:

  • 2 limes juice of
  • 2 tsp Old Bay™ Seasoning
  • 1 tsp black pepper
  • 2 Tbsp olive oil OPTIONAL

For sandwiches:

  • 4 whole grain vegan rolls
  • 1/2 cup baby spinach leaves, for topping

Instructions

  • In a small bowl, mix the dressing ingredients.
  • In a medium bowl, mix all the salad ingredients and toss with the dressing.
  • Serve salad on topped with baby spinach, or on a bed of greens with a side of brown rice crackers!
