Bay Avocado Sandwich

Ingredients
For the salad:
- 1 avocado diced
- 1 can chickpeas rinsed, drained, and mashed
- 1 red bell pepper finely chopped
- 2 celery ribs, finely chopped
- 4 green onions finely chopped
- 1/2 cup cilantro chopped
For Dressing:
- 2 limes juice of
- 2 tsp Old Bay™ Seasoning
- 1 tsp black pepper
- 2 Tbsp olive oil OPTIONAL
For sandwiches:
- 4 whole grain vegan rolls
- 1/2 cup baby spinach leaves, for topping
Instructions
- In a small bowl, mix the dressing ingredients.
- In a medium bowl, mix all the salad ingredients and toss with the dressing.
- Serve salad on topped with baby spinach, or on a bed of greens with a side of brown rice crackers!
