Maple Bourbon Barbecue Tofu Sandwiches

Ingredients
- 1/2 cup tomato paste
- 1/2 cup maple syrup
- 1/2 cup bourbon
- 1/4 cup apple cider vinegar
- 1/4 cup soy sauce
- 1 clove garlic minced
- 1 tsp. smoked paprika
- 1/4 tsp black pepper
- pinch cayenne pepper
- 2 lbs. extra firm tofu drained and pressed for 10 minutes
- 1 tbsp vegetable oil OPTIONAL
- 1 green bell pepper sliced into strips
- 1 onion sliced
- 4-6 whole grain vegan sandwich rolls or burger buns
Instructions
- Bring the first 9 ingredients to simmer in a small saucepan over medium heat. Lower heat simmer, uncovered, for 15 more minutes, until thickened. Set aside.
- Get the grill ready.
- Slice tofu in half, width-wise, and then slice length-wise. Place into the tofu slices into a mixing bowl and pour the whiskey bbq sauce over it. Make sure to coat each slice. Use tongs and a brush if needed. The sauce will be hot, so take care.
- Grill tofu slices on both sides, until charred. Reserve any sauce leftover in the bowl to use on sandwiches. Grill onions and peppers in a grill-safe veggie basket / tray until tender and and charred.
- Assemble the sandwiches by topping the roll halves with tofu and veggies, and top with remaining barbecue sauce and the other roll halves.
